Do you know the exact model of the engine in the truck? That will tell us if it is a completely mechanical fuel engine, or an electronic one. It matters because if it is a mechanical one, most likely, the accelerator linkage is not getting the engine to "full fuel" which explains your problem.
If however, it is an electronically (computer) controlled fuel system, that IS a different story.
