Overheating when idle or driving under 45mph

I have a 2011 F250 6.7L SD Fx4 deleted with 5in exhaust and a mini Maxx. If I'm driving under 45 after about 30-40min or sit idle for more than 5 min my mini max goes back to stock and reads Defueling Hot Coolant and I notice my coolant/engine temp will rise to 215-233, but my oil temp never went higher than 210. As soon as I get out of stop and go traffic and back up to 45+mph my coolant temp drops back down to 179-184. Ive only had the truck for 3 weeks and this is the first time it's happened. The outside temp was around 84-88 degrees and I wasn't hauling anything or do any heavy hauling to begin with. Any ideas?

It sounds like your fan is not engaging when it gets hot. Have you had it scanned? Better find a good mechanic who can scan your rig.

either fan isn't engaging, or water pump isn't flowing enough, possible air restriction on radiator

Does it do it when the truck is set to stock?
