Do you know the history on the engine? The 7.3 is prone for cavitation if sca or dca additives were not used it could be a problem. The cylinder walls are thin compared to the 6.9 to the 7.3. It could also be your oil cooler. Are you getting any antifreeze in your oil or vise versa?

The hose that connects to your valve cover by the way it sounds like your saying is the CRD valve. ITs like a pcv valve but for diesels. Take the CDR valve off and soak it in some diesel or kerosene for a bit. DO NOT use compressed air on it because it will rupture the internal diaphragm. Also make sure the little tiny hole on the valve is not plugged up.

Uh I can't tell about it mixing water in oil it don't seem like it but can't tell it has a lot of blow by and a lot of moisture coming out of the crd valve cleaned it once but 3 days later it looked like sludge in it again i found out a little history on it today like the motor was dropped on the floor and the front housing was busted and they brazed it back together I'm thinking most of the problem is the oil cooler but I have found some other thing today so I might be pulling the engine I drained the oil today and seen a piece of metal in it so I dropped the pan enough to get my hand in there and pulled out a small bolt and a piece of one of the oil squirters off of cylinder 3 on the driver side

ID say after hearing that, the motor needs pulled and needs to be gone over and fix. That or replace, just depends on what else you find damaged internally.
