If I let my truck warm up for about ten minutes in the morning in the driveway, I notice when I get in the truck that the gear temperature has risen, yet it takes about another 10 minutes of driving before the coolant temp gets to normal.....

Does this make any sense? In my Duramax, it was the other way around.

Could the two gauges' wiring harnesses be switched and they are reading from the wrong sending units?

I think you are referring to the temp gauge and yes this is normal. The scaling on teh temp gauge is very broad so it isn't very accurate. it is only good to let you know if your overheating.
